Not a lot new to report from the kitchen recently I'm afraid. Its not that I haven't been in the kitchen, just not cooking or baking anything new or exciting. But Saturday was one of my dearest friends birthday's and as she is all the way over in Australia I promised her we would celebrate her special day with a BBQ ... barking I know! Not even a minus degree temperature deterred Hubby and I from standing on the balcony of our flat barbecuing snags (sausages!) and some
Chicken Steaks. We had our usual
green beans and
spinach salad on the side and some of this very yummy Mustard and Onion Relish which is a regular feature at our BBQ's in the summer.
Mustard and Onion Relish
2 tbsp veg oil (or fry lite)
3 onions, peeled and sliced
1 garlic clove, crushed
3 tbsp muscovado sugar
4 tbsp red wine vinegar
2 tsp wholegrain mustard
Salt and black pepper
Heat the oil in a frying pan and fry the onions until golden brown and softened.
Add the garlic and cook for 1 min, then add the sugar, vinegar and mustard.
Bring to the boil and cook for 2-3 mins until syrupy. Season to taste. Serve hot or cold with sausages, burgers, chicken or steak.
