Skinny Passionfruit and Raspberry Muffins
360g SR flour
2 egg whites
3/4 tsp bicarbonate of soda
150ml passionfruit pulp
105g caster sugar
80g frozen raspberries
150g apple sauce (you can use commercial but I prefer homemade)
2 tbsp skim milk
Preheat oven to 200C.
Coat a 12 cup muffin tray with cooking spray or paper baking cases.
Beat egg whites and sugar for 1 min in a medium size mixing bowl. Stir bicarb soda into apple sauce (it will froth) then add to bowl. Do not beat but gently fold in flour, alternating with milk, until all ingredients are just combined. Carefully fold in passionfruit pulp and raspberries.
Spoon mixture into prepared muffin pan, dividing equally into 10 cups (I usually get 12 muffins from this mixture). Bake for 20 mins or until cooked.
Makes 10 to 12 muffins
Can't remember where this one came from, its been around for a while.
Every time I make these I always think they could do with some chocolate added in with the passionfruit and raspberries ... defeats the purpose, I know!
