Strawberry and Clotted Cream Ice Cream

A few weeks ago I was stood in the queue at my local Marks and Sparks, buying some simple essentials after a visit to the gym.  A book, sitting on the shelf of the checkout isle, did its darnedest to try and catch my attention.  I averted my gaze.  The queue moved forwards, the book was closer to me now and it started calling my name.  I protested quietly to myself and reminded myself not to make eye contact.  The person in front of me had nearly finished their transaction, the book was pleading with me and before I knew it that book had made its way from the shelf onto the checkout, without even the merest of page flicks!  I quickly paid for my red pesto and peppers ... and that brazen little book ... and went home.

The book is 'Sundaes and Splits' and quite frankly should be put on a wanted poster!


Strawberry and Clotted Cream Ice Cream
160g caster sugar
2 eggs
225g clotted cream
250ml double cream
250ml whole milk
400g fresh strawberries, hulled and chopped

Put the caster sugar, eggs, clotted cream, milk and strawberries in a blender and blitz for a few mins until you have a smooth mixture.  Churn in an ice cream maker according to the manufacturers instructions, or pour into a freezer proof box with a lid and pop the container in the freezer.  Remove it from the freezer every hour or so, transfer to a large bowl and whisk with an electric hand whisk to incorporate air and break up any large ice crystals.  This will help give a light and creamy texture.  Repeat this every hour until the ice cream is frozen.


Makes 1 litre of ice cream

This makes a lot of ice cream, next time I'll be tempted to only make half a batch.  I like that this ice cream doesn't have to have a custard base but still delivers a lovely and creamy result and that its a simple blend and freeze ice cream that tastes fantastic.

PS - This ice cream goes very well with Peach and Raspberry Slice too ;0)
