Double Chocolate Cookies For Chocolate Week

As promised today launches my week long plan to celebrate Chocolate Week with a different chocolate recipe each day. I don't mind admitting that my plan for the week was thrown into early chaos, we've still not had the chance to fill the cupboards and then I totally forgot that Sis-In-law was coming to stay and that we were going to the movies but a bit of flexibility has saved the day and provided a very yummy dessert at the same time.

Double Chocolate Cookies
1 cup plain flour
1/2 cup cocoa powder (I use Green and Blacks)
1 tsp baking powder
1/2 tsp coarse salt
230g chocolate, 115g coarsely chopped and 115g cut into chunks (I used a mixture of milk and white)
115g unsalted butter
1 1/2 cups vanilla caster sugar
2 large eggs
1 tsp pure vanilla bean paste

Preheat the oven to 160C. Whisk together flour, cocoa powder, baking powder and salt; set aside. Melt 115g coarsely chopped chocolate with the butter in a small heatproof bowl set over a pan of simmering water; let cool slightly.

Put chocolate mixture, sugar, eggs and vanilla in the bowl of an electric mixer fitted with the paddle attachment. Mix on medium speed until combined. Reduce speed to low, gradually mix in the flour mixture. Fold in the chocolate chunks.

Using a 1 1/2 inch ice cream scoop, drop dough onto parchment lined baking sheets, spacing 2 inches about. Bake until cookies are flat and surfaces crack, about 15 mins (cookies should be soft). Let cool on parchment on wire racks.

Cookies can be stored between layers of parchment in airtight containers at room temp up to 3 days.

This dough is a very different from any other kind of cookie dough I've ever worked with before. Its very wet but somehow it just seems to work and makes very crunchy cookies that are perfect for turning into ice cream sandwiches for dessert! I'd add more chocolate chunks next time and I only used half the mixture and made 18 cookies, the other half is sitting quite happily in the fridge till I get some more time to make them up, I think I'll use a smaller scoop though as these cookies spread like there is no tomorrow, I'm all for a chocolate fix but these were quite a rich hit of chocolate.
