Hot Chocolate Fudge Sauce

Sometimes the simplest of recipes and ingredients combine to make the most wonderfully decadent treat.  Sometimes you want to eat something so sickly sweet that you are left groaning for an hour afterwards because the sugar overload is just too much to take.  Sometimes you'll want to eat a wonderfully decadent treat knowing that it will force you to go on a diet for the next year just to work it back off your hips again!  And sometimes (but thankfully not very often!) you just can't be bothered slaving in the kitchen for hours to produce such a sickly sweet but wonderfully decadent treat ... when that happens it is this recipe you'll be needing!

Hot Chocolate Fudge Sauce
Put 200g chopped dark chocolate (we use milk chocolate!), 125ml single cream, 2 tbsp honey and 50g butter in a saucepan (although I do this in a bowl suspended over a pan of gently simmering water ... lets just call it bitter experience!) over a low heat and stir for 4-5 mins or until the mixture is melted and smooth.  Pour hot chocolate fudge sauce over ice cream and cakes.

We have this once in a blue moon as a special treat or pick me up.  The original recipe says to use it straight away but for just the two of us that is just not possible ... although there have been times we've given it a pretty good try!  The hot sauce, fresh from the bowl and drizzled over freshly scooped ice cream is one of life's true pleasures!  The ice cream melts from the heat of the sauce and then as the two learn to live harmoniously, the fudge sauce thickens from the coolness of the ice cream and becomes all thick and fudgy and oozy .... sigh!

The left over sauce keeps well if covered and kept in the fridge or on the bench.  It 'firms' up enough to make a smooth and soft icing for filling cakes and cupcakes, or to dollop over ice cream the following night ... the sauce is also pretty wicked on a banana split ... hot or cold!!!!

PS - please excuse the photos - I was more intent on gluttony than I was in taking pretty pictures!  Priorities, I know ;0)
