It would be fair to say that I set this month's We Should Cocoa Challenge with some trepidation. I don't know what I was so worried about, you all rose to the challenge and them some, resulting in 15 fantastic ways to enjoy lime and chocolate together! Woo hoo ;0)

Our first entry comes from Michelle Peters-Jones of Food, Football and a Baby and is a stunning looking White Chocolate, Key Lime Pie, Dark Chocolate Crumb Crust.
Next up is a new entrant to our challenge, Aveen from Baking Obsessively with her Lime & Coconut Madeleines with White Chocolate. Now all I need is a cuppa and life is complete ... I'm such a sucker for madeleines at the best of times!
The fabulous Miss Cake Baker made an equally fabulous Flourless Chocolate Lime Cake from Nigella for this month's challenge. And what a beauty it is!
Next up is Kath, The Ordinary Cook, with a not so ordinary Lime and Choc Cheesecake. I don;t know about anybody else but I could quite easily fall nose first into such a cheesecake.
This fab Lime Meringue Pie, complete with a chocolate crust, is the brainchild of Dom at Belleau Kitchen.
Phil from As Strong As Soup also used Lime Curd in his entry this month and created this Chocolate and Pear Cake with Lime Curd and Mascarpone Topping.
Victoria The District Chocoholic made these Vegan Tropical Truffles ... coconut and lime flavoured to be exact. Yum!
Hannah at the Corner Cottage Bakery proves she is a woman after my own heart with these brilliant Lime and Chocolate Cocktails. Can't wait to try these bad boys out!
Sharky Oven Gloves has got to be one of the most brilliant names for a blog yet. Mel is the creator and she made this White Chocolate and Lime Cheesecake, proving that white chocolate and lime is a hard to beat combination!
This version of a Chocolate Key Lime Pie comes from Helen at Half a Pot of Cream. That photo has my mouth positively watering!
Our second vegan entry for this month's challenge comes from Mangocheeks and is for Chocolate and Lime Halva. I had never heard of a Halva before but after reading this post I am keen to have a try for myself.
How good does Flourless Chocolate and Lime Cake with a Salted Chocolate and Lime Ganache sound? Thanks to Ros our resident Baking Addict for submitting this one.
Tart to Heart is another blog name I adore! Carly made Key Lime Truffle Tart ... I've put on a few pounds just staring at that photo!
Choclette did not fail to impress with this stunning Lime and White Chocolate Genoise.
And finally I made these Lime and White Chocolate Cookies which I can now confirm go down a treat with some vanilla ice cream sandwiched in the middle!
