Chicken Flatbread Pizza

     I've recently been on a bit of a ricotta cheese kick. I don't know why I didn't realize how versatile this protein rich ingredient is! You can use it in desserts and main dishes, and it can often replace a less healthy ingredient. This recipe is for a flatbread pizza and includes ricotta as part of the sauce. The best part of this recipe is that it's very quick to make and great for those nights when you don't have time or feel like doing much for dinner.

makes 4
3/4 cup red-fat ricotta cheese
4 tsp roasted garlic
4 flatbreads (such as Flat-Out)
3 cups chicken, chopped (I used breaded chicken, but grilled would be healthier)
1/2 cup sun-dried tomato, chopped
3/4 cup grated mozzarella
Salt and Pepper
  • Stir together the ricotta and garlic. Spread on the flatbread.
  • Top with chicken , tomato, and mozzarella. 
  • Season to taste with salt and pepper. 
  • Bake at 375* for about 5 minutes.
