Zucchini bread

I have posted so many things now that I forget what I have posted and what I haven't. I looked back through the posts, found that I haven't posted a recipe for zucchini bread.  How did this happen, since we have it fairly regularly. I usually make two loaves and freeze one, which thaws in the refrigerator in about a day.

Anyhow, I made this a couple of weeks ago when my mother in law came to visit. She eats fairly healthily, so I didn't want to send her into a diabetic coma with a lot of cookies or sugar. This time I used homegrown (well, my father in law's home grown) yellow squash and zucchini, so it was maybe a little sweeter than normal but it's all I had. I thought it was fabulous.

makes 2 loaves
3 c shredded zucchini (or combo summer squash/zucchini)
1-1/2 c sugar
1/2 c canola oil
4 eggs (or 3 eggs + 1 Tbl flax seed + 3 Tbl water)
3 c flour (I used half whole wheat)
4 tsp baking powder
1 tsp cinnamon
2 tsp vanilla
  • Heat oven to 350*
  • Grease, bottoms only, of two loaf pans.
  • In large bowl, mix zucchini sugar, oil, vanilla, and eggs. Stir in remaining ingredients.
  • Pour into pans. 
  • Bake 50-60 minutes. 
  • When cool, freeze one and enjoy the other. I like to eat it warm with a little butter on top.

Secret Recipe Club: Pretzel Rolls and Beer Bread



     It's that time of the month again! I'm participating in the Secret Recipe Club. Basically, you sign up and you are assigned a blog. You get to pick a recipe from their blog to try and change at your will. Then you make your post about it on the assigned day. All posts for that day are added to a blog hop, so it's easy to see what everyone else made too. It's so fun to see what people pick from your own website too!

     This month, I was assigned to Heather's blog: It's Yummy to My Tummy. There were several recipes I found that I wanted to try....and I'm still going to try the granola bars and the fruit and cheese danish. I ended up choosing two for this post: pretzel rolls and beer bread. I've been wanting to try my own buns for a while now, so the pretzel rolls worked out perfectly. I keep hearing about the Tastefully Simple beer bread, but I've never had it, so when I saw that recipe I had to try that too. Both came out tasting great.

    I really love the pretzel rolls. I've actually made them three times now (in a month!). We've eaten them with grilled burgers, chicken and lunchmeat. Chicken salad sandwiches would also taste great, but that is one thing I love and J won't eat! I think everything tastes better with a special bread, and this one wont disappoint. It tastes just like the soft pretzels at a ballpark...but I'm sure it's much healthier since you know all the ingredients in it! It also freezes well too. I froze them after baking them all the way, but you could also freeze them after a couple minutes in the oven (before they brown) then brown them after thawing.

     The beer bread is very good too. I recommend it as a sandwich bread or as a dipper bit. Alone, this bread is a good basic bread, but the beer flavor compliments and enhances other toppings or ingredients really well. We made grilled chicken with BBQ sauce sandwiches out of this bread. We used a strong dark beer from Trader Joe's (similar to Guinness), but you could use any beer you like the flavor of. Heather said once she made it with cream soda and sprinkled on cinnamon and sugar. I keep meaning to try that! Yum.

     Of course, I changed both recipes just a bit. I substituted white whole wheat flour, which is our family preference. This also means adding in some vital wheat gluten to make sure the yeast works properly.



Pretzel Rolls

1-1/3 cups warm water

2 Tbl warm milk

2-1/2 tsp yeast

1/3 cup brown sugar

2 Tbl melted butter

3-1/2 cups whole wheat flour

2 Tbl + 2 tsp vital wheat gluten

kosher salt

2 quarts cold water

1/2 cup baking soda




  • Mix 1/3 cup warm water (about 105*) with yeast and some of the brown sugar. Let stand until foamy.

  •  Add the remaining cup of warm water with milk, the rest of the brown sugar, and melted butter and swirl to dissolve. Add flour and mix at medium-low speed. Knead for about 2 minutes. Roll into a 2 foot long log and cut into 12 even pieces. Cover dough with plastic and damp cloth and sit for 10-20 minutes. 

  • Pat dough into rolls or knots (the rolls rose better for me) and arrange on a lightly floured surface about an inch apart. Cover with lightly oiled plastic wrap and let pretzels rest for another 30-45 minutes. They should rise quite a bit during this time. 

  • Preheat oven to 425*. Lightly oil baking sheets.

  • In a large stockpot (seriously-Large! When you add the baking soda it's like a volcanic reaction!) Bring the cold water to a rolling boil and add baking soda.

  • Drop two rolls into the boiling water and boil no longer than 30 seconds, turning once. carefully remove and place  on baking sheet. Sprinkle with salt. Repeat.

  • Bake rolls for about 8-10 minutes or until browned all over. 

  • Cool about 5 minutes before transferring to a wire rack.








Beer Bread


12 oz beer


2-1/2 cups + 2Tbl whole wheat flour


1/3 cup sugar


4 Tbl melted butter


4-1/2 tsp baking powder


3/4 tsp salt



  • Preheat oven to 350*. Grease loaf pan. 

  • Combine flour, sugar, baking powder, and salt. Stir in beer. 

  • Pour batter into pan and brush on melted butter. 

  • Bake 50-60 minutes until browned.

  • Cool slightly and remove from pan. 


















Best Ever Pancakes

I think I have mentioned one of my favorite cookbooks before...A PTO cookbook from an elementary school where my grandma used to work. I love this cookbook because it has recipes that real people make....and those real people must think the recipes are fantastic or they wouldn't have submitted them to be published in the PTO fundraiser cookbook. Sometimes, I look through cookbooks and they have a few things I would make, but I would never buy the cookbook because other recipes have crazy ingredients or seem really complicated...not that I don't like a challenge every once in a while.
Anyway, as I flipped through my favorite, well one of my favorite, cookbook I saw "Best Ever Pancake" and I had to make them. We make pancakes every Friday morning to celebrate making to the end of the week, so I'm always on the lookout for a good recipe. These were great. They were nice and buttery, without being super rich.  We will definitely keep this recipe in our rotation.

1-1/2 c flour (I used half whole wheat/half white)
1-3/4 tsp baking powder
1 tsp salt
3 Tbl sugar
1 c milk
2 eggs, slightly beaten (or 1 egg + 1Tbl flax seed + 3 Tbl water)
3 Tbl butter, melted
1 tsp vanilla
  • Combine flour, baking powder, salt, and sugar in large bowl.
  • Combine milk, eggs, butter, and vanilla in a small bowl.
  • Pour liquid ingredients into dry ingredients and mix well. 
  • Scoop 1/4c batter onto hot griddle. Flip when edges begin to turn.

Blueberry Muffins 2

We went back to get more blueberries. The U-pick season had just ended, the day before-just my luck, so we got some from the cooler. For lack of creativity, I decided to make blueberry muffins again. Though I liked the muffins we made before, I decided to try something different. These were fabulous right out of the oven...and the next morning, too!
I found it in my favorite old cookbook: Good Housekeeping Illustrated Cookbook.


As I type this, I smell the strawberry muffins baking. We like muffins, can't you tell?

2 cups flour (I use half whole wheat/half white)
2 Tbl sugar
1 Tbl baking powder
1/2 tsp salt
1 egg
1/2 c sugar
3/4 c fresh/frozen blueberries
1/2 tsp lemon extract
1 c milk
3 Tbl flax seed (or 1 Tbl oil)
3 Tbl oil (canola)
  • Preheat oven to 400*. Grease or line muffin pans.
  • In large bowl, mix flour, 2 Tbl sugar, baking powder, and salt.
  • In small bowl, beat egg slightly, then stir in milk, flax seed, oil, 1/2 c sugar, blueberries, and lemon extract.
  • Add egg mixture to flour mixture. Stir until just moistened. Ovoid overmixing to prevent toughness.
  • Spoon into muffin pan.
  • Bake 20-25 minutes until risen and golden. Toothpick should come out clean and dry.
  • Cool on wire rack immediately

Chocolate Chip Pancakes

     If you have been following for a while, you know we really love our pancakes and waffles. We eat them every Friday morning. Lately, since my husband got a new job, I make huge batches and freeze the extras so that he can let me sleep in eat them before he goes to work. For an on-the-go breakfast, Heat a frozen pancake in the microwave and top with peanut butter. Fold up like a taco, and get on your way.
     Usually, I just make plain pancakes, but I went all out last week and added mini-chocolate chips. I hate when you bite into a chocolate chip pancake and all you taste is chocolate. Don't get me wrong, I love chocolate! I just don't want to eat something that sweet and rich for breakfast. Mini chocolate chips were the perfect compromise. You still taste the chocolate, but it's note overpowering the whole pancake.
     In addition to the chocolate chips, this particular recipe includes oatmeal. This makes me feel less guilty about serving pancakes to my two year old every Friday! They are super filling and mostly healthy.
     If you want to freeze them....Cool completely and layer wax paper between each pancake in a resealable freezer bag.

3/4 cup whole wheat flour
1 Tbl baking powder
1 tsp salt
1-1/2 cups milk
1 cup quick cooking oats
1 Tbl brown sugar
1 tsp vanilla
2 eggs, lightly beaten
1/3 cup mini chocolate chips
  • Mix the flour, baking powder, and salt. 
  • In a different bowl, mix the milk, oatmeal, sugar, and vanilla. Stir in the eggs and then add the flour mixture a little at a time. Stir in the chocolate chips. Stir until just combined. 
  • Coat a griddle (or skillet) with spray. pour about 1/4 cup of batter for each pancake. 
  • When the edges are cooked and little bubbles form in the middle, flip the pancake over. Cook until golden. 
  • Serve with syrup or peanut butter.

blueberry muffins

     We went to u-pick blueberries last weekend which turned in to quite an adventure. We went before to get strawberries and the little on was content with hanging out in the stroller as we picked to our hearts content. This time around, she is a little older and realizes that it's more fun to walk around than sit in the stroller with nothing to do or get into. Well, one of my latest Goodwill finds was one of those baby leashes (is that what it's really called?) so you can keep hold of your kid but still let them have the freedom of walking around. Miss E thinks it's a game for now and loves her new freedom. So, off we go to the blueberry patch, kid on a leash in tow. I might have mentioned before: Miss E's very favorite food is "Bubbles" a.k.a. blueberries. We start picking, and she all of the sudden realizes what we are doing and goes nuts. She eats them off the ground, out of our box, off the trees. Some were green, some were blue...she wasn't discriminating. At least they don't spray their plants with any chemicals! Lesson learned: when picking blueberries, Miss E and Daddy go to the park!
     Enough of the story. We are all here for recipes, right? We decided to make the classic blueberry muffin with some of our freshly picked blueberries. There is just something special about the tart sweet taste of fresh blueberries that makes everything you make with them better! I might get motivated to make more treats with them....or we might eat them out of the box....or we might go pick some more!
Recipe from B Hand G New Cook Book 


1-3/4 c flour (I use half wheat/half white)
1/3 c sugar
2 tsp baking powder
1/4 tsp salt
1 beaten egg
3/4 c milk
1/3 c cooking oil
3/4 c fresh blueberries (frozen if that's all you have)
1 tsp shredded lemon peel
  • In a mixing bowl, combine flour, sugar, baking powder, and salt. Make a well in center.
  • Combine egg, milk, and oil. Add all at once to the flour mixture.
  • Stir till just moistened (will be lumpy). Stir in blueberries and lemon peel.
  • Grease muffin cups or line with cups. Fill 2/3 full. 
  • Bake in 400* oven about 20 minutes or till golden.

Zucchini Banana Craisin Muffins (or Bread)

     For the first time, we have a raised bed garden. We built and planted it about a month ago, and I can't believe how much it has changed since then! I didn't expect that at all. With all that growth, we've had an abundance of zucchini. I've been trying to be creative in ways to use it. Tomorrow night, we'll be having Zucchini Gratin with our cookout. I'm so excited!
     In addition to our zucchini, I had a couple of bananas that were over ripe....you know the kind. You'd never eat it, but it makes the best banana bread. So I decided to combine them and make a zucchini banana bread and it turned out fabulous. The recipe was based off a couple of recipes and ended up making 12 muffins and a loaf. Luckily, our friend wanted some bread so we didn't have to find room in our overflowing freezer. Zucchini bread does freeze well though if you are not so fortunate=P
3 eggs
6 Tbl flaxseed
10 Tbl canola oil
2/3 cup brown sugar
2/3 cup sugar
2 cups zucchini
2 bananas, mashed
2 tsp vanilla
3-1/2 cups flour (minus 7 Tbl if using whole wheat)
1 Tbl cinnamon
1-1/2 tsp baking powder
1 tsp baking soda
1 tsp salt
1/2 cup dried cranberries
  • Preheat oven to 325*
  • Beat eggs until frothy. 
  • Add oil, sugars, zucchini, bananas and vanilla.
  • Stir in remaining ingredients until just combined. 
  • For muffins, bake 20-25 minutes or until the toothpick comes out clean.
  • For loaves, bake about an hour or until the toothpick comes out clean.

Plain Waffles

We like to have waffles or pancakes on Fridays...I guess it's a reward for making through the week or something. Sometimes we do crazy things like add cinnamon and flax seed, but this time, we just wanted plain, regular waffles. I dug out the owner's manual that came with the waffle maker and found this recipe, and they are delicious! The best part is, the recipe made way more than we could eat. I froze the leftovers on a cookie sheet for about an hour, then placed them in freezer bags to on hand for a quick breakfast....your very own, homemade and better tasting, frozen waffles. Just pop them in the toaster or microwave when you want to eat them.

3 large eggs, separated
1-1/2 cups milk
1/2 cup vegetable oil
1 cup flour
2 tsp baking powder
1 Tbl sugar
1/2 tsp salt
  • Lightly grease and preheat waffle maker.
  • In large mixing bowl, beat egg yolks, milk and oil until thoroughly mixed. Add flour, baking powder, sugar, and salt. Beat until just smooth.
  • In small bowl, beat egg whites with mixer on high until stiff peaks form.
  • With rubber spatula, gently fold the beaten egg whites into the mixture. Do not overmix.
  • Pour batter onto the center of the waffle grid (Mine used about 1 1/3 cups-but your waffle maker may be a different size!)
  • Close the lid and bake. Repeat with remaining batter.

Meatfree Monday #3 Strawberry Crepes

     Slowly but surely, more people are linking up to Meatfree Mondays. The more people that link up, the bigger my "to try" folder becomes.
     This week, for lack of time, I'm posting a breakfast for dinner idea. Sometimes, I find recipes, or have ideas for breakfast foods, but I just don't have time in the morning to make them. In those cases, we eat breakfast for dinner.
     These crepes, are so good. They had just the right texture and complimented the sweet ricotta filling perfectly.  I actually made them again and used blueberries instead of strawberries. I can't decide which one I like better! A couple of things I like about this recipe is that you can make these the night before if you did want to make them for breakfast, and you can freeze the extras for a super quick breakfast (or dinner) the next time around. I don't know about you, but I don't need 18 crepes to fill me up!
     If you follow my blog, you may have noticed that I've had a lot of strawberry recipes recently. We've been using up the almost five pounds of u-pick strawberries we got at the local berry farm. I think I have one more new recipe to post after this one, so stay tuned for that. It's a delicious honey sweetened strawberry freezer jam! It's so much better than store bought jam!

makes about 18 crepes
Crepes: from Better Homes & Gardens
1-1/2 cups milk
1 cup flour (take out 2 Tbl if using whole wheat)
2 eggs
1 Tbl oil
1/4 tsp salt
(For dessert crepes, omit salt and add 2 Tbl sugar)
Filling: From Joy Bauer

15 oz Ricotta
2 Tbl milk
6 Tbl powdered sugar (or regular)
1/2 tsp vanilla
Strawberries, blueberries, or whatever fruit you want
  • Combine milk, flour, eggs, oil and 1/4 tsp salt. Beat till well mixed. 
  • Heat a lightly greased 6-inch skillet. 
  • Remove skillet from heat and spoon 2 Tablespoons of the batter. Lift and tilt pan to spread batter. 
  • Return to heat, brown on one side only. 
  • Flip pan over onto a paper towel.  
  • Repeat with remaining batter.
  • Prepare ricotta by whisking the ingredients.
  • Place a couple of tablespoons of ricotta on each crepe. Fold the sides in and top with fruit.
  • For freezing: Place two layers of waxed paper between extra crepes to freeze. Let them thaw at room temperature for about an hour before using...or pop them in the microwave for about 30 seconds.

Strawberry White Chocolate Chip Muffins

     It's strawberry season here in Indiana. Last week we went to the local U-pick, and got about four and a half pounds of strawberries. I've been experimenting and snacking on the best strawberries I've had in a very long time. I don't know what it is that makes them so much better, but I can never find tasty strawberries at the store. I might go back this week to get a little more.
     A couple of weeks ago, I saw a strawberry chocolate chip bread recipe and knew I wanted to make muffins using it as a guideline. I did make a lot of changes, but here is the original.
    I've been trying to substitute some ingredients for others that are a bit healthier. This muffin recipe includes whole wheat flour, flax seed, and some agave in place of some sugar. My whole family loved them, and we didn't have to feel guilty about eating the whole batch in a day!

12 muffins
2 cups strawberries, chopped
1/4 cup brown sugar
1/3 cup agave
1-1/2 cup flour (take out 3Tbl for whole wheat)
3/4 tsp cinnamon
1/2 tsp salt
1/2 tsp soda
6 Tbl milled flax seed
6 Tbl oil
2 eggs
1/2 tsp vanilla
1/2 cup white chocolate chips
  • Puree 1cup of strawberries. Dice remaining. Combine and sprinkle with sugar.
  • Combine flour, cinnamon, salt, and baking soda. 
  • Add agave, oil, egg, and vanilla. 
  • Mix in strawberries. 
  • Fold in chips.
  • Bake @ 325* until golden. (original calls for 350*, but I lowered it because of the agave)

The Best Waffles and Homemade Maple Syrup

     I got a new waffle maker! I'm so excited about it because the one we had was so terrible. It was pretty old and didn't cook evenly. J wasn't convinced that I needed a new one, but after the first batch he was glad we got it. I have tried several recipes, and I think I have finally found the greatest one in a Better Homes &Gardens Cookbook. This recipe creates a waffle that is practically perfect in every way. Just enough flavor, not too bready (is that a word?), light and fluffy, yet filling at the same time. Another plus of our waffle maker is that I can have my perfectly golden waffles, and J can have his barely cooked waffles. These taste great any way you like them! Don't be tempted to save time and use the whole egg at once. Your waffle will taste so much better if you use the directions as stated.
     The second recipe is for true penny-pincher's. While I would love to be able to afford real maple syrup all the time, we can't. Especially since we eat waffles or pancakes every Friday morning!...and my husband eats the frozen leftovers for breakfast, so I don't have to get up early and cook. He's just that cool. Anyhow, Robin's Imitation Maple Syrup really tastes like the kind you buy at the store...for pennies.
 


Waffles:
1-3/4 c flour (take out 3-1/2Tbl if using whole wheat)
1 Tbl baking powder
1/4 tsp salt
2 egg yolks
1-3/4 c milk
1/2 c canola oil (I use 3 Tbl flax seed + 7 Tbl oil)
2 egg whites
  • Combine flour, baking powder, and salt. 
  • In another bowl, beat egg yolk slightly. Be in milk and oil. 
  • Add egg yolks mixture to flour mixture all at once. 
  • Stir until just combined, but still slightly lumpy.
  • Beat/Whisk egg whites till stiff peaks form. I do this in the Kitchen-Aid while I'm combining all the other stuff. 
  • Gently fold beaten egg whites into batter, leaving a few fluffs of egg white. Do not over mix.
  • Pour onto waffle iron according to your manufacturers directions. For me, it's 1/2 cup and this recipe makes 9 waffles.
Syrup:
2 cups sugar
1 cup water
1 tsp maple extract
1/2 tsp vanilla
  • Bring water and sugar to boil, stirring constantly, until it appears to thicken. The longer you boil, the thicker it will get. It also gets thicker as it cools.
  • Add flavorings while cooling. 
  • Store in refrigerator.

Pumpkin Nutella Muffins

     Another Muffin Monday post for you today. Sometimes, the best muffins are inspired by bread or other treats I've had. This is one of those recipes. I can't remember where I had the bread, but it was a very good pumpkin chocolate chip bread! I didn't have chocolate chips tonight, so I used Nutella. Now, I'm convinced this was even better!
     I've been working on a few variations to recipes to cut out a few calories or fat. You wouldn't know it with these. They came out delicious, moist, and with good texture. My favorite part was the Nutella surprise in the middle of the muffin!
     I figured up some nutritional information using myfitnesspal.com. One muffin has 180 calories, 7 grams of fat, and 3 grams of fiber if you use whole wheat flour, flax, and applesauce as listed.

for 12 muffins:
1-1/2 cups flour (Take away 3 Tbl if using whole wheat)
1/2 tsp pumpkin pie spice
1 tsp cinnamon
1/4 tsp salt
1/2 tsp baking soda
1/4 tsp baking powder
1 c sugar
1/4 c unsweetened applesauce
1/4 c very soft butter (or use no applesauce and 1/2c butter)
1 egg
1-1/2 tsp flax
1-1/2 Tbl water
8 oz pumpkin (homemade puree or canned)
1/4 c Nutella
  • Preheat oven to 350*. Place liners in muffin tin, or oil it.
  • Mix flour, pumpkin pie spice, cinnamon,  salt, baking soda, and baking powder. Set aside.
  • Whisk sugar, applesauce, and butter. Add eggs and whisk until fluffy. Add pumpkin.
  • Add the dry ingredients to the wet. Stir with a wooden spoon until just combined. Do not overmix.
  • Place about a tablespoon of batter in each muffin cup.
  • Add about 1/2 teaspoon of Nutella, and top with more batter.
  • Using a toothpick, swirl a little more Nutella on each muffin top. 
  • Bake about 20 minutes in preheated oven.

Chocolate Cinnamon Muffins with Banana

     A few years ago, Starbucks served a Chocolate Cinnamon Bread that was to die for. One day, I picked up a recipe card on their counter. I've made it a few times, and it always comes out terrific. It's a very rich bread, almost a cake really. It's definitely not the most healthy recipe you could use, but it tastes so good!
     Yesterday, I was pondering the muffins I would make for the week, and I found this recipe in my box. I was standing next to a very ripe banana at the time. Here's goes my mind: Bananas and cinnamon are very good together...and so are bananas and chocolate. This can't go wrong.
     Since I was already going to add bananas into the recipe to try to make muffins, I thought I would change a couple of other things to make this a little bit healthier. The result was a a very good, cake like muffin with a delicious sugar crust. They turned out even better than I had hoped! We ended up with 24, so we froze about half of them to eat another week. I'll show you the recipe for a dozen. Enjoy!
     As a note, bananas can replace butter in baking measure for measure. Be sure that you want to taste the banana in your recipe though, since they do have a strong flavor. Applesauce can also be used to replace about half of the butter, but it does change the texture so be careful with that one.

Chocolate Banana Batter
1 mashed banana + enough butter(or applesauce) to = 1/2 cup
1 cup sugar
1 egg
2 tsp milled flax seed
2 Tbl water
 2/3 cup flour (take out 1Tbl/cup whole wheat flour)
1 tsp cinnamon
1/3 tsp salt
1/8 tsp baking powder
1/8 tsp baking soda
1/3 cup buttermilk
1 Tbl + 1tsp water
1/3 tsp vanilla
Cocoa-Spice Sugar Crust
1 Tbl + 1tsp sugar
1 Tbl + 1 tsp brown sugar
1/4 tsp cinnamon
1/8 tsp cocoa powder
pinch ginger
pinch cloves
  • Cream banana, butter, and sugar on medium speed until light and creamy.
  • Add egg, flax seed, and water. Scrape down the sides of the bowl as needed.
  • Sift together the flour, cocoa, cinnamon, salt, baking powder, and baking soda. 
  • In another bowl, whisk buttermilk, water, and vanilla. 
  • On low speed, alternately add in the flour mixture and the buttermilk mixture to the butter. Beat until just blended. 
  • Divide batter evenly into muffin cups. Set aside while making the sugar crust.
  • Whisk together sugars, cinnamon, cocoa, ginger, and cloves. 
  • Sprinkle on the muffin batter.
  • Bake @ 350* until a toothpick inserted in the center comes out clean (about 20 minutes)

Oprah Biscuits

These biscuits are one of our favorite sides. We love them because they are flavorful  and they go with just about everything. The best part is, they are made with things you probably have on hand which makes them a penny-pinching classic.
The original recipe was aired on the Oprah show a few years ago, thus the name "Oprah Biscuits." I think the guy who was on there might have been her personal chef.

Makes 12
2 c flour
2 tsp baking powder
1/2 tsp baking soda
1 tsp salt
4 Tbl cold butter
4 Tbl (2oz) goat cheese (I used cheddar!)
1 c buttermilk (I used 1 cup milk + 1 Tbl vinegar-let sit for 5 minutes)
butter to grease pan
1/4 c Parmesan cheese
  • Preheat oven to 425*
  • Mix all ingredients. Add extra tablespoon of milk if needed.
  • Drop batter onto greased pan (Use an oven proof cast iron skillet if you have one)
  • Brush with melted butter
  • Bake 14-16 minutes or until browned on top.
  • Sprinkle with Parmesan cheese

Lemon Blueberry Muffins

I really should take photography classes
     We love muffins.  I make them at least once a week to have around for a quick breakfast. My daughter loves anything in the shape of a muffin. She won't normally eat meatloaf, but if I make it in a muffin cup she will. I found a recipe for lemon blueberry bread and thought it would make fantastic muffins. I was not disappointed. We had company over the morning we tried these, and everyone loved them. These are very light and refreshing, and the glaze on top adds that something extra that makes them terrific. The best part was, I had everything on hand to make them! I will definitely make these again.

1/3 cup melted butter
1 cup white sugar
3 tablespoons lemon juice
2 eggs
1 1/2 cups flour (I used white whole wheat/removed 1-1/2 Tbl flour)
1 teaspoon baking powder
1 teaspoon salt
1/2 cup milk
1Tbl lemon extract
1 1/4 cup fresh or frozen blueberries or raspberries (I used frozen)
2 tablespoons lemon juice
1/3 cup powdered sugar (or more, if needed, for thickening)
  • Preheat oven to 350 degrees. 
  • Line muffin tins.
  • In a mixing bowl, beat together butter, 1 cup sugar, 3 tablespoons juice and eggs. Combine flour, baking powder and salt; stir into egg mixture alternately with milk. Beat in lemon extract. Toss blueberries with just enough flour to coat. (This helps keep them evenly distributed throughout rather than sinking like a lump to the bottom.) Gently stir blueberries into batter, then pour batter into muffin tins.
  • Bake in preheated oven for about 15 minutes, or until a toothpick inserted into the center of the loaf comes out clean.
  •  Meanwhile, combine 2 tablespoons lemon juice and 1/3 cup powdered sugar in a small bowl. Drizzle over warm muffins, using pastry brush to evening distribute.

1 3/4 cup flour
3 tsp baking powder
1 tsp salt
1/3 cup vegetable shortening
2/3 cup milk
1/2 cup grated sharp cheddar cheese
1/4 cup butter, melted
1/4 tsp garlic powder
Parsley (optional)
  • Combine the first four ingredients until it looks like fine crumbs
  • Add milk and cheese
  • Beat 30 seconds
  • Spoon onto cookie sheet
  • Bake @ 450 for 8-10 minutes until just golden
  • Combine melted butter and garlic
  • Brush onto hot biscuits
  • Sprinkle with parsley

Banana Bread Waffles with Cinnamon Butter

     For my daughter's birthday, I made a special breakfast. Anytime you ask her what she wants to eat, she will say, "Waffles!" She also loves bananas. So, for her birthday, we had banana bread waffles.
     These were really great waffles, but the best part was the cinnamon butter. Maybe I thought that because bananas aren't my favorite, but I really loved the cinnamon butter. The recipe made more than we needed, so we had cinnamon butter left over for our toast for a couple of days.

1/2 c butter, softened
2 Tbl powdered sugar
1/4 tsp cinnamon
1/4 tsp vanilla


1 (7oz)pkg banana muffin mix
2/3 c butter milk
1 egg
  • Preheat waffle iron.
  • Combine butter, sugar, cinnamon, and vanilla in a small bowl. Set aside.
  • Combine muffin mix, buttermilk, and egg. Stir until just blended.
  • Spray waffle iron with cooking spray. 
  • Spooin batter onto waffle iron and bake. Repeat with remaining batter.
  • Spoon cinnamon butter onto each waffle. 
  • Top with syrup if desired.

Sweet Potato Quick Bread

I was looking for a way to use some sweet potatoes we had. My husband doesn't really like sweet potatoes because he likes more savory vegetables and side dishes. I thought this sweet quick bread might be the perfect compromise to get him to eat vegetables...even if a little sugar is added. I found this recipe in the Taste of Home's 2006 Quick Cooking Annual Recipes cookbook. I cut the recipe in half and changed a couple of things from the original since I didn't have (or like) some ingredients. The maple glaze was my addition. The original called for an orange glaze, but I didn't have the supplies for that. The result: it tastes a lot like this pumpkin pound cake recipe I make sometimes, but not quite as sweet. It's delicious!


 1 3/4 c flour
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp salt
1/4 tsp ground cloves
1 c mashed sweet potatoes (about 2 sweet potatoes)
1 egg
1 1/2 tsp milled flax seed
1 1/2 Tbl water
1/2 c canola oil
1 1/2 c sugar
1/2 c chopped walnuts (opt. I didn't use these)
1/2 c raisins (opt. I didn't use these)

Glaze:
1/2 c powdered sugar
2 Tb;c maple syrup
1/2 tsp vanilla
  • In a large bowl, combine the first seven ingredients.
  • In another bowl, whisk the sweet potatoes, eggs, and oil. Add sugar; whisk until smooth.
  • Stir into dry ingredients until just combined. Fold in walnuts and raisins if using.
  • Transfer (thick) batter to greased loaf pan.
  • Bake @ 350* for 60-70 minutes or until toothpick comes out clean.
  • Cool for 10 minutes.
  • Remove from pan and put on wire rack to cool completely. 
  • For glaze, combine ingredients and whisk until smooth.
  • Drizzle glaze over loaf.

Apple Pie Muffins

When my sister and I lived in an apartment together, we found a box mix of apple pie muffins where there is a filling center in the middle of the muffin. The store that had them, doesn't have them anymore. Since we had some apples that needed to be used soon, I searched for a recipe that had a filling center, but couldn't find one. I decided to use a basic muffin recipe and add the filling myself and see what happened!

Filling
1/2 c brown sugar
1 1/2 tsp sugar
1/3 c flour
1/4 c melted butter
1 tsp cinnamon
1 1/2 cup peeled, diced apples
Muffins
1 1/2 c brown sugar
1 tsp cinnamon (I forgot this ingredient, but it was still great!)
2/3 c oil
1 egg
1 1/2 tsp vanilla
2 1/2 c flour
1 tsp baking soda
1/4 tsp salt
1 c buttermilk (or 1 c milk + 1 Tbl vinegar...sit 5 minutes)
  • Grease muffin cups...or use papers.
  • Boil apples until a little soft (a secret to soft apple pies!)
  • Drain, add the rest of the filling ingredients to the apples. Sit aside.
Alternatively, don't boil the apples. Mix all the filling ingredients in with the other muffin ingredients. This way the apples will be more evenly spread out, rather than a surprise in the middle of your muffin. Both ways are fabulous!
  • Combine muffin ingredients
  • Put a layer of batter to fill 1/4 of the muffin cup. Add a layer of apple filling up to 1/2 of muffin cup. And finally, top with batter to fill to 3/4 of muffin cup. Continue to layer batter, filling, batter in each muffin cup.
  • Bake at 350* for 25 minutes or until golden brown and top springs back.

Peanut Butter and Jelly Muffins

     I've mentioned so many times before how much we love muffins. I make them once or twice a week for a quick and easy breakfast. These peanut butter and jelly muffins might be one of my all time favorites! And, they are healthy to boot.

1/2 c peanut butter
1/2 c carrot puree (I used pumpkin)
1/2 c brown sugar
2 Tbl margarine
1/2 c plain yogurt
1 egg white
1 c flour (minus 2Tbl if using whole wheat)
1 tsp baking powder
1tsp baking soda
1/2 tsp salt
1/2 c all fruit spread (I used Polaner strawberry)
  • Preheat oven to 350* Line muffin tin or coat with spray.
  • Beat peanut butter, carrot (or pumpkin), sugar, and margarine with wooden spoon. Stir in yogurt and egg white.
  • Add flour, baking powder, baking soda, and salt. Stir until just combined, but don't overmix. There may be some lumps.
  • Divide batter into muffin cups and drop a spoonful of preserves on top of each.
  • Bake until tops of muffins are lightly browned and toothpick comes out clean (20-25minutes)
