We Should Cocoa ~ The Raspberry Challenge Round Up
Well here it is! The first ever We Should Cocoa round up includes the creative take of 19 very brave and adventurous soles to combine both chocolate and raspberries for this month's challenge. Many thanks to everyone who has taken part and have helped to make this a success - and to think that Choclette and I both worried that nobody would want to participate!
Cheesecake was a popular choice this month so lets start with all these tasty offering's.
First off is Tola from Personalised Chocolate with a Raspberry and Chocolate Cheesecake that she found over at the Taste website.
Lucie from Cooking at Marystow also opted for a Raspberry and Milk Chocolate Cheesecake to serve at her dinner party for the Celebrity Masterchef final.
The above entry is from Aino over at Salt and Thyme. This is a very decadent looking Double Decker Brownie Cheesecake.
And lets not forget Helen's entry from Half A Pot Of Cream, Raspberry Cheesecake Brownies. A combination of two of my favourite treats!
Frozen treats seem to be another popular way to combine chocolate and raspberries this month and why not? The challenge was launched just in time for the end of summer so what better way to cool down than with some of these frozen puds;
Nic at Cherrapeno made a wonderful Frozen Raspberry Kent Mess. I'm in full agreement Nic, everything does taste better with chocolate!
The Brownville Girl (AKA Eleanor) also went for a frozen treat but in the form of a Raspberry, Cherry and White Chocolate Semifreddo.
Nora The Kitchen 'Splorer's husband was the lucky recipient of Molten Chocolate Babycakes with Raspberry and Redcurrant Sorbet. Mr 'Splorer was treated to a wonderful three course meal for his 30th birthday, and what a way to celebrate!
In the mood for truffles maybe? Well take a look at these brilliant offerings;
From the kitchens of Some Say Cocoa are these wonderful White Chocolate and Raspberry Truffles. Not content with making just one type of truffle, Gilliam really pushed the boat out by making both a truffle wrapped in a moulded white chocolate shell and another in a hand dipped milk chocolate that was then covered in cocoa powder. Spoilt for choice or not, these guys are going on my 'To Make' list for Christmas!
Whetting my truffle appetite even further is Hannah from the Corner Cottage Bakery with these delicious Chocolate Chambord Truffles. Rest assured I am in chocolate truffle nirvana right now!
Next up are cupcakes with no less than three entries this month. Choclette and I didn't pre plan to both make cupcakes either, it was a freak of nature that wound up putting us both on the same wave length ... honestly!
Cat from Cat's Cupcakes picked a recipe from the Hummingbird Bakery book and made these White Chocolate and Raspberry Cupcakes.
Proving that not all recipes are alike is Choclette's entry for White Chocolate and Raspberry Cupcakes. Choclette saw the recipe for these cupcakes over at Cook Sister and knew that the icing had to be tried! Too right, such a wonderful colour!
And rounding up the cupcake offerings is my own version, adapted from Cookie Girl's 'Eat Me'.
Now its time to mention all those individuals who came up with something truly unique for this month's challenge.
Over at Mainly Baking, Suelle created these wonderful Chocolate and Frangipane Tartlettes. This was a tough challenge for Suelle owing to the fact that her chief taste tester doesn't like raspberries, I'm offering my services for any future chocolate and raspberry taste testing opportunities!
This wonderful White Chocolate Tiramisu is courtesy of Phil from As Strong As Soup. This will also be going on my 'To Make' list for Christmas!
Akheela from Torview Toronto made this Chocolate Cake with Raspberry Jam using homemade raspberry jam.
These Chocolate Nut Bars were made by Lucy The KitchenMaid. With a creation like this Lucy I'm more than happy to take the blame for any calories that were consumed ;0)
Check out these Mini Chocolate Mousse Cups with Raspberry Coulis that Samantha from Caketopia made. Ingenious! And yes, you guessed it - these are going on my Christmas list too! (Can you see a theme developing?!?!?!)
Linda V over at Bubble and Sweet made Raspberry and Chocolate Macaroons. Kudos to you Linda, I find Macaroons temperamental beasts but these look absolutely divine!
And this Chocolate Raspberry Cake completes our chocolate and raspberry round up. It was made by C from Cake, Crumbs and Cooking. Perfect with a cuppa and a gang of the girls!
