Clementine Curd Cake

Why is it my Father In Law always decides to visit us when the cupboard is bare???  I swear the man has an inbuilt sensor just so he knows he'll get something freshly baked for his visit ;0)

This is a rehash of the Passionfruit Curd Cake that I made in March last year, except I swapped the passionfruit curd [sigh] for some clementine curd that was left over from The Mack Cake.

It might not look like much but Hubby and his Dad both really enjoyed this.  In fact, half the loaf left in a doggy bag for my father in law to enjoy at home later.  And Hubby has requested I bake another loaf with the remaining leftover curd so he can scoff it at work too.  Nuff said ;0)
