Healthy Red & Green Green-Bean Salad
A heathy 'concept' salad for holiday buffets, potlucks and special meals, a red and green salad that looks as festive as it is healthy. How healthy? Well, Weight Watchers, a full serving is just half a point using the old WW point system, the new Weight Watchers PointsPlus value is 1. (More on PointsPlus, below.) It's low carb, it's high in fiber -- and naturally, it tastes great. Vegan too!

ABOUT the NEW WEIGHT WATCHERS PointsPlus PROGRAM
On November 29, Weight Watchers unveiled the new points system that it's been hinting about for weeks -- it's called PointsPlus. Look for more information later this week but in the mean time, please know that both A Veggie Venture and Kitchen Parade will make the transition to PointsPlus but will NOT abandon the old Weight Watchers points system that so many of us have relied on for so many years.

I do think that the new points system is fabulous -- it will help guide our food decisions to better healthy choices, pointing us to fruits and vegetables, lean meats and other proteins, non-fat dairy and whole grains. It makes such sense: five points of vegetable soup is NOT the same as five points of chocolate cake. Until now, points were points, no distinction between healthy foods and occasional indulgences. Now we have an extra reason to choose fruits (now free!) and vegetables (butternut squash is now free! I roasted a big one just this morning to celebrate!).
