BLT Wrap

     When I was little, I always hated when my mom made BLT's for dinner. First off, I didn't really like tomatoes. Now that I'm older, I've decided to give tomatoes a second chance. After all, I like marinara sauce, ketchup, and salsa.
     For my first sandwich with raw tomatoes, I chose a classic BLT. I added a little something extra though. The verdict...well, I've made this four or five times now. I love BLT's! They are so quick and easy. The hubs can even make them for himself when I'm not around....which is saying alot about how easy they are. Sorry, J.

Mayo (I like the olive oil kind)
1 whole wheat tortilla
2 slices turkey bacon
2 slices roasted turkey breast (deli meat)
2 slices of tomato
2 leaves lettuce (or any greens--I like turnip greens)
  • Smear the mayo on the tortilla.
  • Line the middle of the tortilla with bacon and turkey, tomato and lettuce.
  • Roll it into a tube.

Turkey Chilli Burgers


Barbie season has well and truly arrived here in Edinburgh.  This makes me so happy ;0)
Short sleeves, bright blue skies, Bumble Bees and Barbies - not sure that life could get any better.

To celebrate the change of weather the most recent ash cloud seems to have brought with it we've been having a few barbies of late, be prepared to see a few savoury meals appearing while the warm weather is with us, all cooked on the webber of course.  A couple of years ago I pretty much lived off these burgers.  Living in a flat in Craigmillar space was tight and there was definitely no space for a barbecue so I used to make these on the George Foreman.  Once we moved to the Waterfront I've been spoilt and can now have a webber on the balcony (still not a backyard which I long for but we'll get there one day ~ baby steps!) and I've decided that these burgers taste even better when cooked in the great outdoors.

Turkey Chilli Burgers
500g minced turkey
2 garlic cloves, crushed
1 red chilli, seeded and finely chopped
1 tbsp chopped fresh mint
2 tbsp chopped fresh parsley or coriander
2 tsp Worcestershire sauce
olive oil, for brushing
Salt and freshly ground black pepper
Burger buns, rocket and tomato slices, to serve


Mix together the minced turkey, garlic, chilli, herbs, worcestershire sauce and plenty of salt and pepper.  Shape the mixture into 4 even sized burgers, then brush lightly with the oil.  Preheat the grill to medium.


Grill for 5 mins on each side - or cook on a medium to hot barbie - until well browned and cooked through.  Serve in burger buns with rocket and juicy sliced tomatoes.

These burgers come with a couple of added bonus.  Firstly, because turkey mince is used they are pretty healthy ~ if you are counting points like me then these are only 3.5 points per burger.  And the other bonus is a pretty selfish one, Hubby doesn't like Turkey so it means that I can have them all to myself!  Not all in one sitting mind because that would defeat the purpose of counting the points of course!

Crock Pot Turkey

     I mentioned this in my Menu Plan a couple of weeks ago, and I am finally getting around to posting. The plague Sickness has been going through our house, and it has been crazy! Anyway, just in time for the Big Day, I give you Crock Pot Turkey.
     My mom always hosted Thanksgiving for our family. She was in charge of the turkey and homemade noodles. In fact, my Papaw won't come unless there are homemade noodles! Somewhere along the road, she found this recipe for turkey in the crock pot, and hasn't made it another way since. It's very moist and requires no cleaning of the "yucky stuff."
    The directions here say to use a baking bag, but I didn't have one. I just put the turkey straight in the crock pot and threw in the water and butter. It is more difficult to clean up my way, and it doesn't change the flavor of the turkey in the end. 
     I have been buying a turkey breast every couple of weeks and cooking it, then dividing it into two ounce baggies to eat as a snack during the day. A 4lb turkey ($9.99 @ Aldi) gives you about 14-2oz bags, and you can freeze the ones you won't get to for a couple of days.

3-4 lb boneless turkey breast
1 stick butter
1 cup water
1 lrg baking bag (I didn't use this, but it would make it less messy to clean!)
1 Tbl flour (I didn't do this either)
  • Place 1 Tbl flour in bag and shake. 
  • Place turkey, without gravy packet, in bag.
  • Add stick of butter and water. 
  • Tie bag. Poke a few holes in top of bag to let steam escape.
  • Place bag in crock pot and let cook all day on low (7-10 hours).
  • Remove to serving dish, and pull apart with fork.
  • spoon small amount of broth over turkey and toss.

Mom's Noodles


These noodles are so good! We have them every year at Thanksgiving, and everyone always looks forward to them. They are pretty versitile, too. You could make them with any meat you want...turkey, chuck roast, chicken, no meat...
Mom always makes peanut butter fudge the same day because you will hae leftover milnot.

2 eggs, well beaten
2 egg shell halves of milnot (evaporated milk in a can)
1/2 tsp salt
1/2 tsp baking powder
2 c flour
  • Mix eggs and milnot.
  • Stir in dry ingredients. 
  • Roll out onto floured surface to about 1/4 inch thick. Dough will be VERY stiff!
  • Use a pizza slicer to slice into noodle strips.
  • let dry (I let them dry overnight)
  • Drop into boiling broth (If you are making these with meat, boil meat in water to make broth. Shred meat and then put it back into the water with the noodles)
  • Add salt and pepper as needed.
  • You can freeze the noodles before cooking if you make extras...Less work next time!
