We're still trying to eat healthy around her, but we are getting tired of chicken dishes. I guess I equate chicken with healthy. I started thinking about things we order when we go out to eat, and one of my husband's favorites is a roast beef melt. I don't usually buy deli meat because it kind of grosses me out after the first day or so. I don't know why, I'm just weird I guess. I thought I could get over the deli meat issue if it was warmed up and I think these turned about pretty good.
for one sandwich2 slices of wheat bread (or bun of your choice)
2 slices low fat American cheese
4 oz thinly sliced roast beef, warmed
1Tbl spicy brown mustard
- Spray oil on skillet or griddle and heat to medium
- Butter one side of each slice of bread
- Place one slice of bread, butter side down, in skillet. Top with one slice of cheese, meat, mustard, the other slice of cheese, and the other slice of bread (butter side up)
- Toast sandwich until golden and flip over to toast the other side.
