Sarah at Maison Cupcake has come up with a new monthly blogging event called Forever Nigella. The concept is pretty simple but ingenious all the same, each month Sarah will reveal the theme and its up to you to find a recipe from one of Nigella's books that suits the theme for you. As I own every single book ever published by Nigella I knew this was my kind of blog event, especially as there really aren't that many rules, the only real one I need to follow is not to post the recipe ... must remember that one! So I went straight to the book shelf, I knew what I wanted to make as soon as I saw Sarah's post, White Chocolate Mousse from Nigella Express. So why is this post all about Pomegranate Ice Cream? Ahem ... that book led me astray I tell you! I sat down on New Year's Day and started to flick through the pages and I found Nigella's recipe for Pomegranate Ice Cream, all the ingredients were either in the fruit bowl or in the fridge and to be honest, the cream needed to be used up or it was headed for the bin. Enter my reoccurring New Year resolution to waste less food and this is how the Ice Cream came to be my submission for this months event.
It is yummy too (as if a Nigella recipe could ever be anything other!) and true to the ethos of the book, very quick and simple to make. Serving it in a kitsch love heart bowl is completely optionally but totally in keeping with a Nigella recipe in my opinion. Now my only problem is keeping Hubby and myself away from the freezer long enough to save some ice cream for tomorrow night's dessert!
