Triple Chocolate and Banana Cupcakes

OK, so these little cupcakes are not going to be winning a beauty contest any time soon. Hubby really likes them though and in my book that means they have been a success. I originally came across this recipe when Chocolate Shavings made Chocolate Banana Bread with it, before that it had been a muffin recipe. I was in the mood for baking cupcakes last night so with a few tweaks here and there the Triple Chocolate and Banana Cupcakes were born.

Triple Chocolate and Banana Cupcakes
4 medium sized bananas, mashed
1/2 cup caster sugar
1/4 cup firmly packed light brown sugar
115g unsalted butter
1/4 cup milk
1 large egg
1 1/2 cups plain flour
2 tsp strong espresso
1 1/2 tsp baking soda
1 tsp salt
145g chocolate chips, I used a mixture of dark, milk and white

Preheat oven to 180C.

In a medium bowl, beat the butter until the colour lightens. Add the sugars and beat until combined, light and fluffy. Meanwhile, in a jug mix all the remaining wet ingredients together (excluding the mashed banana). In another bowl whisk together the flour, baking soda and salt.

Add a third of the flour mixture to the butter mixture and mix until just combined, stir in half the liquid, followed by a third of the flour, the rest of the liquid and the rest of the flour, stirring well in between each addition. Fold through the banana and chocolate chips.

Divide into muffin tins, lined with paper cases. Bake for 15 to 20 mins or until golden.

To ice them I used the Buttercream Icing but added 35g of cocoa powder (make sure it is a good quality brand) to the icing sugar.
