We Should Cocoa ~ The 'Left Over' Round Up
This month's challenge seemed to be a bit of a two edged sword for some of our intrepid bloggers, some people had loads of ingredients leftover from Christmas that the challenge became what to use them up in, for others the challenge was finding an ingredient that was leftover. Because this month's challenge was such an open field we have lots of great entries, can't wait to try these recipes out. So without further ado, lets get started;
Suelle from Mainly Baking used up some marzipan in these Chocolate and Marzipan Biscuits.
Johanna AKA The Green Gourmet Giraffe made these Christmas Pudding Bites with some leftover Christmas Pud!
Brownieville Girl used up some leftover Chestnuts in these scrummy looking Brownies.
Everyday Mom, Kim, made this Chocolate Pear Cake, using up surplus pears.
Over at the Corner Cottage Bakery, Hannah opted to use white chocolate as her surplus stock and made some White Chocolate and Chilli Brownies.
Brenda or Rhyleysgranny from Tea and Wheaten Bread made Chocolate Prune Bars. Her 'leftover' ingredient was of course Prunes.
Rocky Road was just the ticket for our More Than Occasional Baker to use up the stock pile of goodies left over from Christmas.
Kath from The Ordinary Cook made use of some extra Marmalade to make this Chocolate Marmalade Cake.
Phil in the Kitchen from Strong As Soup took a break from his marmalade antics to make a Reine de Saba to use up some extra ground almonds.
Poor Dom at Belleau Kitchen was forced to break his promise of not baking a cake in January just so he could make these Lamingtons. Its a tough job Dom, but somebody's gotta do it ;0)
The surplus ingredient in this Kugelhopf from Sarah at Maison Cupcake is Cherry Cola!
Let's not forget that January is also the month that Australia Day is celebrated so it seemed quite fitting to me that the Kitchen Maid's entry should be Chocolate Weetbix Slice (weetbix and weet-a-bix are not a million miles away from each other but one is quintessentially Australian and the other isn't lol). The surplus ingredient here was the Weetbix .... which wouldn't stay in the cupboard very long at my house. Love the stuff!
Eira from Cookbooks Galore made these Chocolate Nutty Clusters to use up some excess nuts.
Gillian, formerly from Some Say Cocoa, has moved to a new blog address, http://www.chocolatehere.ie/. Her entry this month was inspired by one of our other challenge regulars, Bubble and Sweet and is no other than the uber popular Cake Pops, using up some leftover Christmas Cake.
New to We Should Cocoa is Veena from Veg Junction with these Choco Coconut Balls. The surplus ingredient in these little treats was the desiccated coconut.
Choclette's entry this month is a Almond and Squash Cake and contains squash as the leftover.
Helen at Fuss Free Flavours also made a Chocolate Marmalade Cake for this month's challenge, proving that marmalade is a very popular store cupboard ingredient at the moment.
This Chocolate Banana Halwa is from another first timer to We Should Cocoa. Shri from Tiffin Carrier Antic/que's used banana's as her extra ingredient.
C from Cake, Crumbs and Cooking totally caught my imagination with her entry this month, Chocolate Box Cake, made up with leftover chocolates!
This Chocolate Coffee Ice Cream comes from another new face to our group, Michelle from Food, Football and a Baby. Michelle used leftover half and half (always wondered what that was!) and cream to make this ice cream.
And finally there is me! I made Chocolate and Caramel Brownies to use up some excess dulce de leche from Christmas.
