Mozzarella, Beetroot and Rocket Salad

This salad is about as virtuous as this weekend is going to get! 


We have a surprise welcome home cocktail party for Miss KH tonight.  She has finally returned from her in year in Tanzania and I can't wait to see her again!  She arrived back in the country on Wednesday and Mr PS quickly whisked off to the Lake District, returning tonight for the welcome home party she has no idea about (just between you and me I am expecting to see an addition to a certain finger on her left hand). 

We have all been divided into teams and Mr PS has delegated me as team captain for the vodka cocktails.  There will be Woo Woo's and Sex On The Beach aplenty tonight - coincidentally, if ever you need to google the recipe for Sex On The Beach be sure to add the word 'cocktail'!  What a surprise I got! 


Anyhoo, that's the fun and frolics for tonight.  Today's lunch has had to be the virtuous part of the weekend, given that we will be in recovery mode tomorrow!  This is our favourite salad to have at this time of year, substantial enough for a meal for two or great as a side to a barbie when the whole crowd is around.  I love the flavours combined with every mouthful, the peppery rocket, the sweet beetroot, smooth creamy mozzarella and the wonderful tang from the dressing - mmmmmmmm!

Mozzarella, Beetroot and Rocket Salad

50g bag rocket
1 ball mozzarella, torn into pieces
4 cooked vac pack beetroot, cut into wedges (I prefer baby beetroot from Baxters than the vac pack which can sometimes be a bit on the bitter side)
2 tbsp red wine or sherry vinegar
1 tsp Dijon mustard
Olive oil
2 tbsp Pine nuts, toasted

Divide the rocket, cheese and beetroot between 2 plates. Whisk the vinegar and mustard together then whisk in 2 tbsp olive oil and season. Drizzle over the salad then scatter over pine nuts.
