This is my favorite chocolate chip cookie! I always freeze some balls of dough on cookie sheets, then put them in a freezer bag, so all you have to do is thaw them, and pop them in the oven when you need a quick treat....and so you won't eat the whole batch at once. The first picture is the frozen dough, the second is the baked cookie.
The parts in parenthesis are optional changes that I make sometimes to make them a little healthier.
This picture was taken on a day that I used oatmeal which makes a little coarser texture. If you like smoother, traditional chocolate chip cookies, just use the flour.
1 cup butter
1 cup peanut butter
1 cup sugar
1 cup brown sugar
2 eggs (or 1 egg and 1 Tbl flax seed plus 3 Tbl water)
2 cup flour (or 2/3 cup flour plus 1 1/3 cup flour)
1 tsp baking soda
1 tsp baking powder
1 tsp salt
2 cups chips (any kind or combination you like)
- Heat oven to 375*
- Beat butter, PB, sugars and eggs in bowl.
- Stir in flour, soda, powder, and salt
- Add chips
- Drop by rounded tsp (or use meatball scooper) onto ungreased cookie sheets
- Bake 8-10 minutes or until set.
- Cool on racks or wax paper
