Today is my Mum's birthday and the whole family are taking her to the Raspberry Farm for lunch. When she told me that was the plan for the day the first words out of my mouth were 'Aw - have a Red Back Spider for me!" People who know me well were shocked by this statement,
I'm not exactly the world's greatest admirer of the 8 legged trauma inducers, no matter what colour their backs are! But these Red Back Spiders are different, these ones I like - a lot! In fact, it's generally considered that you've had a deprived childhood (by Australian standards) if you never had a Spider. These Spiders are made fizzy soft drink, generally coke or lemonade and ice cream - what kid doesn't like these things? But the Raspberry Farm take it a step further and make their Spiders with raspberries (not surprisingly!) and they are the nicest spiders I've ever had ~ and I like to consider myself a bit of a
coinsurer of such delicacies.
So in honour of Mum's birthday I decided to create some Red Back Spiders to have too. Happy Birthday!
Red Back Spider
Raspberries
Lemonade
Vanilla Ice Cream
Place a raspberry in the bottom of a sundae glass. Top with a scoop of ice cream and a few more raspberries and then add some lemonade (it will fizz up a lot so slow and steady is best, too much lemonade and it gets really messy very quickly). Mix everything together so there are no lumps of ice cream left then top up with more lemonade. Add a raspberry to the top and enjoy!
Mine are missing something from the ones at the Raspberry Farm, I think it might be Raspberry Coulis now I think about it
