6 - Talking to my wee niece on the phone (the conversation so far has been ".... Park ...." I would love to take her but there is the small issue of the entire world being between us at the moment!)

Now, onto the Passionfruit Ice Cream. Firstly, I want to apologise for the photo's. They aren't great (which is why the ice cream is all the way at the bottom of this post!) I was too excited to get my taste buds working on the ice cream to concentrate on getting good photos. Before Christmas I came across a certain high street food hall selling packs of passionfruit, I've waxed lyrical about my obsession with this particular fruit before so I won't go over the details again and I'll just tell you that I had to buy a couple of packs and hope you'll understand why! The plan was to make a delicious dessert with them over Christmas and Hogmanay but, alas, that never happened! Before I knew it I was staring down the barrel of my last day of holiday's and having to face the thought of going back to work. I don't hate my job but it wouldn't be fair to say that I enjoy it either! One day I'll have my own business baking cakes ... maybe even a wee coffee shop with polished wooden floor boards, nice soft sofas, big floor to ceiling windows, cake stands overflowing with beautifully iced cupcakes and huge slices of chocolate cake, jars of old fashioned cookies on the counter, cases of curds and jams ... not that I've thought about it too much!
Back to reality! So, I was staring down the barrel of returning to work. I knew that there would need to be some comfort food to return home to after work today to help cheer me up, help cheer us both up actually, Hubby and I work in the same office and he feels the same way about work as I do. Comfort food ... passionfruit ... had to be ice cream!
Passionfruit Ice Cream
1 cup caster sugar
4 cups thickened cream (double cream)
3 tsp vanilla extract
6 passionfruit halved, pulp removed
Place sugar and half the cream in a saucepan and stir with a wooden spoon over a low heat for 5 mins or until the sugar dissolves. Remove from the heat. Stir in the remaining cream and the vanilla.
Line the base and sides of a loaf pan with cling film, allow it to overhang. Pour the mixture in, fold over the cling film and freeze for 3 to 4 hours or until almost set. This step took hours longer for me, in the end I left it to set overnight and finished the rest of the recipe off this morning before heading out the door.
Use a metal spoon to roughly break mixture. Lift mixture out using cling film and tip into the bowl of a food processor. Process until smooth.
Pour the mixture back into the loaf pan. Stir in the passionfruit. Cover with cling film and freeze for 2 to 3 hours or until set.
Serve in scoops or slices. If ice cream is too hard, leave out of the freezer for 10 mins before serving.
Serves 4
Just the tonic for the return to work blues. This ice cream is YUM! So easy to make and no ice cream machines needed either (the jury is still out for me on ice cream makers, I can't help but feel its cheating a bit to use a machine!) Its a very sweet and rich ice cream and will serve far more than four, unless someone has a serious Nigella moment come bed time tonight ....
