Simple Mashed Potatoes


We eat mashed potatoes about once a week. Potatoes are so cheap and versitile. They are a starchy vegetable, however, so we usually have another green vegetable to make up for it.
makes enough for 5-6 servings
6 small/medium potatoes
2 Tbl butter
milk
salt and pepper to taste
  • Peel and cube potatoes. Boil in water 30 minutes.
  • Drain and put in mixing bowl.
  • Add butter and start mixing. Gradually add milk until fluffy. It doesn't take much!
  • Add salt and pepper to taste. Sometimes, I don't mix this in, but rather sit it on the table for diners to add it for themselves
