I have to admit to having absolutely no idea what I was going to make for this months We Should Cocoa challenge, even when I set it! And Google didn't help me very much. While searching through some bookmarked recipes (I'm seriously going to have to cull them, if I baked 2 things everyday for the rest of my life from my list of bookmarked recipes I'm still not sure I'd hit the bottom!!) I stumbled across a post from Mary at One Perfect Bite. My original idea had been to make these cookies and serve them along side a lime posset for dessert ... that didn't happen! The cookies are too good on their own anyway so I'll make them lime posset another day ;0)
Lime and White Chocolate Cookies
225g unsalted butter, softened
140g caster sugar
140g light brown sugar
2 eggs
1 tsp vanilla bean paste
Zest of 2 limes
3 tsp lime juice
470g plain flour
1 tsp bicarbonate of soda
1/4 tsp baking powder
1/4 tsp salt
340g white chocolate, chopped (I used chocolate drops)
Preheat oven to 180C. Line 4 baking trays with parchment paper.
Combine butter and sugar in bowl of an electric stand mixer. Beat until combined but not fluffy. Add eggs, one at a time, beating just to incorporate. Add vanilla, lime juice and zest and mix to combine.
Combine flour, bicarbonate of soda, baking powder and salt in a separate bowl. Whisk to combine and lighten. Mix into creamed mixture just until combined. Fold in the white chocolate.
Shape dough into 36 (ish) balls. Place them well placed on the baking trays and bake until the edges are golden and the centers are just set, about 12 to 13 minutes. Let them sit for about 3 mins before moving the cookies to cooling racks.
Makes about 36 cookies (I think I got about 42 out of the mixture)
